Games that use dice and the dice themselves goes back to the Crusades, but current craps is approximately a century old. Current craps formed from the ancient English game called Hazard. No one knows for certain the beginnings of the game, but Hazard is said to have been created by the Englishman, Sir William of Tyre, in the twelfth century. It’s supposed that Sir William’s paladins bet on Hazard amid a siege on the citadel Hazarth in 1125 AD. The title Hazard was derived from the castle’s name.
Early French colonists imported the game Hazard to Acadia. In the 1700s, when displaced by the British, the French moved down south and settled in southern Louisiana where they eventually became known as Cajuns. When they fled Acadia, they took their best-loved game, Hazard, with them. The Cajuns broke down the game and made it fair mathematically. It’s believed that the Cajuns adjusted the title to craps, which was gotten from the term for the losing throw of two in the game of Hazard, recognized as "crabs."
From Louisiana, the game moved to the Mississippi riverboats and across the country. Many consider the dice maker John H. Winn as the founder of current craps. In 1907, Winn designed the current craps layout. He added the Do not Pass line so players can wager on the dice to not win. Later, he created the boxes for Place bets and added the Big 6, Big 8, and Hardways.
